
Daikon Rolls with Green Peas Hummus
Ingredients:

2 cups Green Peas Hummus

2 daikon radishes, peeled and sliced lengthwise into long thin strips on a mandolin

A handful of sprouts or microgreens (like radish or broccoli), rinsed and gently patted dried
Instructions:

Soak the daikon slide in the lemon or apple vinegar.

Spread a small amount of the hummus and sprouts along the inside of the daikon slice.

Roll the daikon tightly away from you and place seam side down on a plate.
