Daikon Rolls with Green Peas Hummus





  • 2 cups Green Peas Hummus

  • 2 daikon radishes, peeled and sliced lengthwise into long thin strips on a mandolin

  • A handful of sprouts or microgreens (like radish or broccoli), rinsed and gently patted dried


  1. Soak the daikon slide in the lemon or apple vinegar.

  2. Spread a small amount of the hummus and sprouts along the inside of the daikon slice. 

  3. Roll the daikon tightly away from you and place seam side down on a plate.
